「ピーマンきらい!」「にんじん、いらない!」
子どものころ、あるいは今でも、どうしても苦手な野菜はありませんか? 親としては「体にいいんだから食べなさい」と言いたくなるところです。
でも研究によると、栄養の大切さを説明するより、もっと効く方法があるようです。それは、毎日ほんのひと口ずつ、味わってもらうこと。
01「食べたことがないから、きらい」
子どもには、初めて見る食べ物を警戒する性質があります。これは、昔の人類が毒のある植物を口にしないために役立ったと考えられています。
1982年、アメリカの心理学者リーン・バーチさんらは、2歳の子どもたちに、なじみのない食べ物をいろいろな回数ずつ味わってもらう実験をしました。すると、くり返し味わった食べ物ほど、子どもたちに好まれるようになったのです。論文のタイトルは、まさに「きらい、だって食べたことないもん(I don't like it; I never tried it)」でした。

②の「栄養のアドバイス」グループは、①の味見グループほどは上がりませんでした。頭で理解することより、舌で慣れることのほうが、好き嫌いを変える力が大きかったのです。

03なぜ「くり返し」が効くの?
くり返し食べることで、
- 「食べても大丈夫だった」という安心感が積み重なる
- 味や食感がなじみのあるものになる
- 苦味などへの慣れが生まれる
といったことが起きると考えられています。
2018年の総説でも、幼児の野菜嫌いを減らす方法として、味見をくり返す方法(テイスト・エクスポージャー)が最もよい結果を出していると整理されています。絵本や、野菜にさわる・においをかぐといった遊びの中での体験も、ある程度効果があるようです。
04大事なのは「ムリに食べさせない」こと
この実験の「ひと口」は、ほんの少しの味見です。お皿いっぱいの野菜を「全部食べなさい」と強制したわけではありません。
むしろ、強く強制すると逆効果になりうることも、多くの研究者が指摘しています。「ひと口だけ、試してみよう」くらいの軽い気持ちで、くり返しチャンスをつくることがポイントです。
05まとめ
苦手な野菜を好きになるコツは、「体にいいから」と説得することより、「毎日ひと口」くり返し味わうことでした。好き嫌いは、変えられないものではなく、慣れで少しずつ変わっていくものなのです。

Young children are often wary of unfamiliar foods, a tendency that may once have protected our ancestors from toxic plants. But this reluctance can change. In 1982, the American psychologist Leann Birch showed that two-year-olds came to prefer unfamiliar foods the more often they tasted them. Her paper had a memorable title, "I don't like it; I never tried it." Building on this idea, a 2003 randomized trial led by Jane Wardle in London recruited 156 parents and their children aged two to six.
After each child chose a disliked vegetable, the families were randomly assigned to three groups, and parents either offered a small taste of it daily for 14 days, received nutrition advice and a leaflet, or did nothing. Only the taste exposure group showed significant gains in liking, ranking and intake of the vegetable. The advice group improved less than the taste exposure group did. Repeated exposure is thought to work by building a sense of safety and familiarity.
Researchers stress that the tastes should be offered gently and never forced. Wardle's follow-up was short, and there is little evidence on children with extremely picky eating. Even so, a 2018 review concluded that taste exposure is the most consistently effective approach for preschoolers.
