このネバネバ、いったい何でできているのでしょうか。実は、その正体はうま味成分の「グルタミン酸」がずらっとつながった鎖です。
さらにおもしろいことに、納豆菌の中では遺伝子の一部が"引っ越し"をして、突然ネバネバを作れなくなることがあるのもわかってきました。
01ネバネバは「うま味のつぶ」がつながったひも
納豆の糸の主成分は、ポリγ-グルタミン酸(γ-PGA)という物質です。
グルタミン酸は、昆布だしのうま味のもとになるアミノ酸。それが何千個もつながった長い鎖になったのがポリグルタミン酸です。ひものように長い分子がからみ合い、水を抱え込むので、あのよく伸びる粘りが生まれます。糸には、果糖がつながったフラクタンという成分も混ざっています。
ポイントは、この鎖は大豆に最初から入っているものではないこと。発酵の間に、納豆菌が大豆の成分を材料にして作り出したものなのです。

02納豆菌は「枯草菌」の仲間
納豆菌は、土や枯れ草などにすむ枯草菌(こそうきん)という細菌の仲間です。2010年には、日本の研究チームが納豆菌の全ゲノム(すべての遺伝情報)を読み取ることに成功しました。
その結果、納豆菌は実験室でよく使われる枯草菌とよく似ている一方で、ポリグルタミン酸をたくさん作るのに必要な遺伝子の特徴を、野生の枯草菌と同じように持っていることがわかりました。実験室の枯草菌はこの能力を失っていて、ネバネバの納豆は作れないのです。
03"動く遺伝子"でネバらなくなる
つまり、納豆菌のネバネバ力は、遺伝子のちょっとした"事故"で失われることがあるのです。納豆メーカーがおいしい納豆を作り続けるには、菌の性質を安定に保つ工夫が欠かせません。
ちなみにポリグルタミン酸は、水をよく抱え込む性質などから、化粧品や水の浄化などへの応用も研究されています。

Stir a pack of natto and it pulls into long, stringy threads. These are composed mainly of poly-gamma-glutamic acid, a polymer made of thousands of linked units of glutamic acid, the same amino acid responsible for umami in kombu stock. The long molecules entangle and trap water, which gives natto its stretch, and a chain of fructose called fructan is also present.
The polymer does not come from the soybeans. Natto bacteria, relatives of a common soil bacterium, synthesize it during fermentation. When Japanese researchers sequenced the full genome of a natto strain in 2010, they found that it closely resembled laboratory strains but retained gene features that wild strains use to make the polymer, an ability laboratory strains have lost.
In 2011, another Japanese team showed that a mobile genetic element called IS4Bsu1 can spontaneously insert itself into a gene named swrA, leaving the bacteria unable to produce the sticky substance. Restoring swrA brought the ability back. Popular claims about natto's health benefits have little support from human studies so far. One nutrient does matter, though. Natto is rich in vitamin K2, which can weaken the blood thinner warfarin, so patients taking that drug should consult a doctor.
